Ingredients

125 g unsalted butter

2 tablespoons golden syrup

90 g rolled oats

80 g desiccated coconut

150 g plain flour

110 g caster sugar

55 g brown sugar
-
½ teaspoon bicarbonate of soda

Prepare

Preheat oven to 180°C (350°F).

Line baking trays with paper.

Melt butter and syrup
-
Melt butter and golden syrup in a saucepan, then remove from heat.

Mix

Combine oats, coconut, flour, sugars in a bowl.

Mix bicarbonate of soda with 2 tablespoons boiling water.

Add to butter mixture, then stir into dry ingredients.

Bake
-
Roll dough into tablespoon-sized balls and place on tray.

Bake for 12 minutes, until golden.

Cool on the tray, then transfer to a rack.
