Ingredients

  • 125 g unsalted butter

  • 2 tablespoons golden syrup

  • 90 g rolled oats

  • 80 g desiccated coconut

  • 150 g plain flour

  • 110 g caster sugar

  • 55 g brown sugar

  • ½ teaspoon bicarbonate of soda

Prepare

  • Preheat oven to 180°C (350°F).

  • Line baking trays with paper.

Melt butter and syrup

  1. Melt butter and golden syrup in a saucepan, then remove from heat.

Mix

  1. Combine oats, coconut, flour, sugars in a bowl.

  2. Mix bicarbonate of soda with 2 tablespoons boiling water.

  3. Add to butter mixture, then stir into dry ingredients.

Bake

  1. Roll dough into tablespoon-sized balls and place on tray.

  2. Bake for 12 minutes, until golden.

  3. Cool on the tray, then transfer to a rack.
