
Ingredients

270 ml warm water

2 g granulated sugar

7 g active dry yeast

500 g plain or bread flour

5 g sea salt

30 g avocado oil or any light vegetable oil

1 large egg

Prepare Dough

Combine warm water, sugar, and yeast. Stir to activate.

In a bowl, mix flour, salt, oil, and egg. Add the yeast mixture once it becomes bubbly.

Combine

Mix the dough on medium speed for about 10 minutes, or until smooth and elastic. (will take far longer by hand, 20-30 minutes)

Test by stretching the dough, if it forms a thin translucent sheet, it's ready.

Proof

Place the dough in a lightly oiled bowl and cover.

Let it rise in a warm place until doubled in size.

Preheat the oven to 425°F/218°C. Add a roasting pan of hot water to the bottom rack.

Bake
-
Shape the dough into baguettes.

Spray with water and score each baguette with a sharp knife.

Spray again and place the baguettes in the oven.

Bake for 22 minutes, spraying every 2 minutes for the first 6 minutes.

Remove the hot water pan after 12 minutes and continue baking.

Let the baguettes cool on a wire rack before slicing.
