Ingredients

  • 900g (2 lbs) chicken

  • 3 dried bay leaves

  • 60mL (4 tablespoons) soy sauce

  • 90mL (6 tablespoons) white vinegar

  • 5 cloves garlic

  • 375mL (1 1/2 cups) water

  • 45mL (3 tablespoons) cooking oil

  • 5g (1 teaspoon) sugar

  • 1g (1/4 teaspoon) salt

  • 5g (1 teaspoon) whole peppercorn

Prepare chicken

  1. In a large bowl, combine the chicken, soy sauce, and garlic. Mix well.

  2. Marinate the chicken for at least 1 hour (longer is better).

  1. Heat a cooking pot and add the oil.

  2. When the oil is hot, pan-fry the marinated chicken for 2 minutes on each side.

Simmer

  1. Pour the remaining marinade and garlic into the pot. Add the water and bring to a boil.

  2. Add the bay leaves and peppercorns. Simmer for 30 minutes or until the chicken is tender.

Serve

  • Add the vinegar. Stir and cook for another 10 minutes.

  • Stir in the sugar and salt. Turn off the heat.
