
Ingredients

900g (2 lbs) chicken

3 dried bay leaves

60mL (4 tablespoons) soy sauce

90mL (6 tablespoons) white vinegar

5 cloves garlic
-
375mL (1 1/2 cups) water

45mL (3 tablespoons) cooking oil

5g (1 teaspoon) sugar
-
1g (1/4 teaspoon) salt
-
5g (1 teaspoon) whole peppercorn

Prepare chicken

In a large bowl, combine the chicken, soy sauce, and garlic. Mix well.

Marinate the chicken for at least 1 hour (longer is better).

Cook the chicken

Heat a cooking pot and add the oil.

When the oil is hot, pan-fry the marinated chicken for 2 minutes on each side.

Simmer

Pour the remaining marinade and garlic into the pot. Add the water and bring to a boil.

Add the bay leaves and peppercorns. Simmer for 30 minutes or until the chicken is tender.

Serve

Add the vinegar. Stir and cook for another 10 minutes.

Stir in the sugar and salt. Turn off the heat.
