Prepare vegetables

  1. Heat olive oil in a skillet over medium heat.

  2. Add onion, bell pepper, and garlic. Cook until the onion is translucent.

  3. Stir in tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for 5 minutes.

  4. Add white wine and cook for 10 minutes. Taste and adjust salt.

Add chicken

  • Add chicken, 2 tbsp parsley, and rice. Cook for 1 minute.

Cook

  1. Pour chicken broth over the mixture, gently shake the pan to spread rice evenly.

  2. Bring to a boil, then reduce heat to medium-low. Do not stir to form a crispy bottom layer.

  3. Cook uncovered for 15-18 minutes.

  1. Add shrimp, mussels, and calamari, sprinkle peas on top.

  2. Cook for another 5 minutes or until liquid is absorbed and rice is tender.

  3. Remove from heat, cover with a lid or foil, and let rest for 10 minutes.

  4. Garnish with parsley and lemon slices.
