Ingredients

100g besan (gram) flour (sieved)

1 onion, thinly sliced

3 potatoes, grated or chopped
-
1 tsp salt
-
2 tsp garam masala
-
1 tsp turmeric
-
2 chillies, chopped
-
1 tbsp ginger (optional)

Handful of chopped coriander
-
2 tsp dried fenugreek leaves
-
1 tsp cumin seeds
-
½ tsp red chilli powder
-
Water (as needed)

Oil for frying

Prepare vegetables
-
Slice onion and grate or chop potatoes.

The batter
-
In a bowl, mix onion, potatoes, chillies, ginger, coriander, and spices.

Add gram flour and mix well.

Slowly add water to form a thick batter.

Fry
-
Heat oil in a pan.
-
Drop spoonfuls of the batter into the hot oil.
-
Fry until golden and crispy.
-
Remove and drain on paper towels.
