Ingredients

  • 100g besan (gram) flour (sieved)

  • 1 onion, thinly sliced

  • 3 potatoes, grated or chopped

  • 1 tsp salt

  • 2 tsp garam masala

  • 1 tsp turmeric

  • 2 chillies, chopped

  • 1 tbsp ginger (optional)

  • Handful of chopped coriander

  • 2 tsp dried fenugreek leaves

  • 1 tsp cumin seeds

  • ½ tsp red chilli powder

  • Water (as needed)

  • Oil for frying

Slice onion and grate or chop potatoes..

Prepare vegetables

  1. Slice onion and grate or chop potatoes.

The batter

  1. In a bowl, mix onion, potatoes, chillies, ginger, coriander, and spices.

  2. Add gram flour and mix well.

  3. Slowly add water to form a thick batter.

Fry

  1. Heat oil in a pan.

  2. Drop spoonfuls of the batter into the hot oil.

  3. Fry until golden and crispy.

  4. Remove and drain on paper towels.
